No-Bake Oat Pecan Granola Yogurt Cups

For those times when you want a healthy-ish dessert that can double up as breakfast the next morning, consider these no-bake pecan treats.  Soft caramel dates bring sweetness but also help bind the chopped pecans and oats together.  After a simple press and chill, these can be done in less than 25 minutes.  Fill with the creamiest vanilla bean yogurt that you can find (I like Siggi’s 4%), and then garnish with sliced banans, coconut, and cacao nibs.

We’re slowly adjusting to fall rhythms and the new school year around here.  I’m slowly working on catching on up on things neglected from over the summer, and it feels good to once again have space to cook without two quarreling kids as background noise.  Cooler days will be upon us soon, but for now these no-bake goodies are a great thing for these last warm September days.

A quick naturally sweet treat for an on-the-go breakfast or healthy dessert.

Ingredients

  • 1 cup pecans
  • 1 cup rolled oats
  • 1/2 cup medjool dates (about 8)
  • pinch of sea salt
  • vanilla bean yogurt
  • Sliced bananas, toasted coconut, and cacao nibs for garnish

Instructions

  1. In the bowl of a food processor, pulse the pecans and oats into a coarse meal.
  2. With the food processor running, at the dates one at a time through the feed tube. Process until mixture resembles cake crumbs and sticks together when pressed.
  3. Divide mixture into 8 lightly oiled muffin cups.  Press the mixture firmly into the bottom and sides.
  4. Chill in the freezer for about 15 minutes.  Use a knife to gently remove granola cups from the muffin tin.  To serve, fill each with vanilla yogurt and garnish with sliced bananas, toasted coconut, and cacao nibs.
