Chocolate Granola Bark

Earlier this week a small group of ladies from our iZōsh group met together to watch and discuss a portion of the Half the Sky documentary.  I’d already seen most of the documentary, but I learn so much from being with these other women, and watching parts of it again reminded me of a world that’s so far away from my own.  It makes my heart heavy, but I also find it keeps me grounded and helps me shape a better perspective on life.   “Chocolate and Chat” was the title of our evening and each of us brought a fair-trade chocolate bar to share.  Our collection was impressive.  I do try to buy fair-trade whenever I can because it empowers small farmers and artisans to improve their own livelihoods by building sustainable businesses; it also connects us with other cultures and gives us the opportunity to directly support their economies.  And goodness, there are so many great varieties of high-quality fair-trade chocolate out there.

Cozy Chicken Stew

Cozy Chicken Stew

Last week we visited my dear sister and her family in the Colorado rocky mountains.  Spending time with her is always a little awe-inspiring for me-  not only is she an incredibly hard-working momma of 3 year-old twins, she runs her own photography business, and she just launched a merino wool children’s clothing company together with her husband.  And despite all that she does, she’s incredibly humble, thoughtful, and kind.  She’s my little sis, but I look up to her in so many ways and some of my best memories in life are with her.  For our time together in the mountains, my sister (who also happens to be remarkably organized) spoiled me and brought an entire cooler plus bags full of groceries and frozen meals.  As much as I love cooking, I also love not cooking, and it was such a welcome break from my normal routine of meal planning and grocery shopping.  We’re home again now and though the weather has teased us with glimpses of spring, part of me still wishes for those snowy mountainscapes and cozy meals after long days of skiing.

Kale Pesto Spelt Ravioli

I assure you that one year ago ravioli was at the very bottom on my list of recipes to prioritize.  With all of the countless supermarket varieties out there, why bother?  Lately though as I’ve been feeling rather disappointed with the store bought versions, determination suddenly welled up to make my own.  I admit it had been a while since I used my pasta maker, even though after learning how to make my own spelt pasta I promised myself that I would make fresh pasta more frequently.  But as I started using my hands to gently knead the dough together, molding it into a smooth round, and then rolling it through the machine, I was reminded of how satisfying and meditative the whole process can be.  It’s slow and deliberate and so calming to the soul.
